Ingredients and raw materials

What goes into chocolate wafer bar

Wafer sheets are mostly air. A thin, runny batter of flour and about one and a half times its weight in water is baked for one to two minutes between hot metal plates at about 160–190 °C. The water flashes to steam and escapes, leaving a light, crisp sheet with less than 2% moisture.

The cream does most of the eating. In a filled wafer, the cream is often half or more of the weight, and it carries the flavour: vanilla, chocolate, hazelnut, milk, strawberry and lemon are all common. Kerry and IFF flavours for creams are listed on Matta.

How it's made

How chocolate wafer bar is made

Wafer lines bake sheets between heated plates, spread and stack them with cream, then cool, cut and coat them.

  1. Batter

Flour, water, lecithin, oil, salt and bicarbonate are mixed into a thin batter and used within about half an hour.

  2. Bake

Batter is deposited between pairs of hot plates and baked for about one and a half to two and a half minutes.

  3. Cream and stack

Sheets are spread with warm cream and stacked into books of three or four sheets.

  4. Cool and cut

Books are cooled to set the cream, then cut into fingers with wires or saws.

  5. Coat and wrap

Fingers are enrobed in chocolate, cooled and flow-wrapped against moisture.

Variations and applications

Common variations

Uncoated cream wafers
Layered wafers without a chocolate coat, often vanilla or strawberry flavoured.
Wafer rolls and cones
Rolled or moulded wafers, such as ice cream cones.
Compound-coated wafers
Use a compound coating made with vegetable fats instead of cocoa butter, which is cheaper and more heat-tolerant.
Safety and regulation

Safety, quality and regulation

Wafers must stay dry: they soften above about 5–6% moisture, so packaging needs a good moisture barrier and seal, and shelf life is typically six to nine months. Wheat, milk and soy are allergens and must be declared. Additives must be permitted and used within the limits in standards such as the Codex General Standard for Food Additives.

Wafer bars made for sale in Nigeria must be registered with NAFDAC, with ingredients, allergens, net content, batch and expiry on the pack.

Supply chain

Where the raw materials come from

Flour and sugar are produced in Nigeria mainly from imported wheat and raw sugar. Nigeria grows cocoa but exports most of it as beans, so cocoa butter, cocoa mass and powder are often imported. Fats, lecithin and flavours come from ingredient suppliers.
