What is strawberry flavouring and how is it used?

Strawberry flavouring is a concentrated blend of aroma substances that tastes of strawberry. It gives strawberry milk, yoghurt, ice cream, milkshakes, biscuit creams, sweets and drinks a clear, consistent strawberry taste that real fruit alone cannot deliver after processing. Artificial strawberry flavours often include ethyl methylphenylglycidate, known as "strawberry aldehyde", alongside other fruity and sweet notes.

Functions

What it does

Main flavour
In strawberry milk and many strawberry sweets, the flavour supplies almost all of the strawberry taste.
Booster for real fruit
In yoghurt and fruit preparations, flavour lifts the taste of the fruit, which fades during heat treatment and storage.
Consistency
Strawberries vary by variety, ripeness and season; a flavour gives the same taste in every batch.

Safety and quality

Handling, safety and regulation

Store sealed, cool and away from light, and use within the supplier's shelf life, because fruity top notes fade. Ethyl methylphenylglycidate is a colourless liquid that does not dissolve in water, so it is carried in a solvent or encapsulated.

Ethyl methylphenylglycidate is listed by the US FDA as generally recognised as safe. Flavourings in the European Union are governed by Regulation (EC) No 1334/2008, which sets when a flavour may be called natural. Finished foods in Nigeria must be registered with NAFDAC.
